Cream-Filled Cupcakes

serves: about 2 dozen

Ingredients

1 1/4 c Flour
1 c Sugar
1/3 c Cocoa
3/4 tsp Soda
1/2 tsp Salt
1 c Sour milk
1/3 c Oil
1 Egg
1 tsp Vanilla

Filling:
1 pkg Cream cheese (8 oz)
1/4 c Sugar
1 Egg
1/2 c Mini chocolate chips


Directions

  1. In a bowl, mix cocoa and oil until smooth.
  2. Add egg and mix.
  3. Add sour milk and vanilla; mix.
  4. Combine dry ingredients, add to mixture, and stir. Batter should be thin.
  5. In a separate bowl, mix together cream cheese, egg, and sugar until smooth.
  6. Add chocolate chips to the second bowl.
  7. Put about 1/4 inch batter in bottom of cupcake liner in pan. Add 1 teaspoon of filling in the center and cover with more batter.
  8. Bake at 350 until done.
