New Version of Enchiladas!

I made another post a long time ago (back in 2008!) with the enchilada recipe, but we made a new version of it today and it is VERY tasty! I love it! Like I mentioned before, this is a recipe that you can experiment with and put whatever you like in it! It's never the same when you add different things to it all the time. :) Ryan and I have perfected it over time.

Here is the simple version:
1 lb. hamburger
1 can refried beans
tortillas
enchilada sauce
cheese

Brown hamburger; drain. Add the refried beans to the hamburger. Put some of this mixture in the middle of a tortilla and wrap the tortilla around it. Place each wrapped tortilla in a greased pan. Pour enchilada sauce over the top and cover with cheese. Put in the oven at 350 for 10-15 minutes (long enough to melt the cheese).

With our new version of enchiladas, Ryan seasoned the meat with seasoned salt, chili powder, and minced onion. We put some canned black beans and canned diced tomatoes (both drained) in with the meat and refried beans. Then we put it all into the tortillas! We used the packet enchilada sauce that you make yourself. We like it a lot better than the canned enchilada sauce! (OR you can try the homemade enchilada sauce recipe!) It was delicious!!! Below you can see the mixture inside the enchilada with the hamburger, refried beans, black beans, and tomatoes. It was tasty and filling and healthy!!! :)
