Easy Chicken Parmesan

Throughout the day, I always think about what to make for dinner. One day I thought about making spaghetti. It's quick and easy. Then I remembered we had some chicken that we got on sale not too long ago, and thought that we could try to make homemade chicken parmesan. So Ryan went online and found a recipe for Easy Chicken Parmesan. It turned out great and it was so delicious!

Ingredients:
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
2 to 3 Tbsp. olive oil
8 slices mozzarella cheese, or more
1 jar (16 oz.) spaghetti sauce
Parmesan cheese

Directions:
Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. Heat olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side.



Set chicken in a baking dish. Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350 degrees for about 25 to 30 minutes, or until bubbly.



Serve with spaghetti, garlic bread and a nice green salad.


It's a nice healthy meal! :) It's also really filling! I ate the salad and the one piece of garlic bread (shown in the picture) and only about 1/2 of the chicken and spaghetti and I was so full! If you cut the 4 pieces of chicken in half, it would be good for 4 meals for 2 people, or 8 meals for 1 person (if you have stuff with it like salad and garlic bread). Doesn't cost much at all for this meal! :)
