Quick Black Beans & Rice

This is not a new recipe. I don't have a picture of it, but my sister wanted ideas for low fat meals and this is a great low fat recipe! Ryan and I have made it a couple of times in the past. It is really yummy and healthy and full of protein and goodness! It is also really quick and easy to make! :)

Ingredients:
1 tablespoon vegetable oil (You could probably even omit this, or use olive oil which is a better fat choice)
1 onion, chopped (I believe we used minced onion)
1 can black beans, undrained
1 can stewed tomatoes
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1 1/2 cups uncooked instant brown rice

Directions:
In large saucepan, heat oil over medium-high. Add onion, cook and stir until tender. Add beans, tomatoes, oregano and garlic powder. Bring to a boil; stir in rice. Cover; reduce heat and simmer 5 minutes. Remove from heat; let stand 5 minutes before serving.
